🥩 Ingredients
- 1/2 cup (60g) whole wheat flour
- 1/4 cup (30g) finely shredded carrots
- 1 egg
- 2 tbsp unsweetened applesauce
- 1 tbsp melted coconut oil
- 1/4 tsp baking soda
- 1/4 tsp cinnamon
🌿 Toppings & Garnish
- 2 tbsp plain, unsweetened Greek yogurt
- 1 tbsp plain, low-fat cream cheese, softened
- 1 tsp finely shredded carrots for garnish
- 1 small bone-shaped dog biscuit
👨🍳 Preparation
- Preheat oven to 350°F (175°C). Grease a small ramekin or a standard muffin tin cup.
- In a bowl, whisk together the egg, applesauce, and melted coconut oil. In a separate bowl, combine the flour, shredded carrots, baking soda, and cinnamon.
- Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
- Pour batter into the prepared ramekin/muffin cup and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
🍽️ Assembly & Serving
- While the cake cools, mix the Greek yogurt and softened cream cheese together until smooth to create the ‘frosting’.
- Once the cake is cool, spread the frosting over the top. Sprinkle with the extra shredded carrots and place the bone-shaped biscuit in the center.
🐾 Serves: 1 small cake (for one medium/large dog or to be portioned for smaller dogs)
