🥩 Ingredients
- 1 large sweet potato, scrubbed and peeled
- 1 tbsp melted coconut oil
🌿 Toppings & Garnish
- 1/4 cup plain, unsweetened Greek yogurt
- 1/4 tsp ground turmeric
- 1 tbsp finely chopped fresh parsley
👨🍳 Preparation
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut the sweet potato into 1/4-inch thick ‘fry’ sticks.
- In a medium bowl, toss the sweet potato sticks with the melted coconut oil until evenly coated.
- Spread the fries in a single layer on the prepared baking sheet and bake for 20-25 minutes, flipping halfway through, until tender and slightly browned at the edges.
